Ingredients Needed for Guacamole Onion Rings

½ yellow bell pepper
½ red bell pepper
1 red onion
2 garlic cloves
1 avocado
½ lime
1 tablespoon olive oil
salt
2 chilis es
2 onions
8 bocconcinis
½ cup flour
½ cup panko crumbs
2 eggs, whisked
vegetable oil for frying

How to Make Guacamole Onion Rings

  1. Dice the bell peppers and thinly chop the onion.
  2. Slice the garlic and the avocado.
  3. Add all ingredients in a blender.
  4. Drizzle with the olive oil, lime juice, add a pinch of salt, and 2 chilies.
  5. Blend all the ingredients until smooth.
  6. Thickly slice the onion and separate its rings.
  7. Fill each ring with the guacamole and 1 small bocconcini. Freeze them for 1 hour.
  8. After that, coat them with the flour, whisked egg, and panko crumbs.
  9. Deep fry them for about 2-3 minutes, until golden and crispy.
