24 cherry tomatoes, quartered
salt
2 teaspoons of red wine vinegar
1 tablespoon extra virgin olive oil
pepper
1 red onion, chopped
1 jalapeno, seeded and finely chopped
2 tablespoons of cilantro, chopped
2 avocados
iceberg lettuce

How to Make Guacamole Lettuce Boats

  1. Combine the cherry tomatoes with salt, red wine vinegar, extra virgin olive oil, and pepper in a medium bowl.
  2. Add the red onion, jalapeno, and cilantro. Stir well.
  3. Add the avocado flesh to a bowl and mash it with a fork.
  4. Arrange lettuce leaves on plates or on a platter. Stuff them with avocado mash and cherry tomato salad.
