Grilled Chicken, Watermelon and Spinach Salad

If you want to eat something light, but also rewarding tonight, you should really try this salad! It has a lot of ingredients and textures, that when combined lead to a wonderful dish, perfect for treating yourself after a long day. Also, you don’t get to try everyday a salad that has both chicken and watermelon in it.

Ingredients Needed for Grilled Chicken, Watermelon and Spinach Salad

5 ounces of chicken breast
1 ounce of pine nuts
½ lime
1 tablespoon honey
1 tablespoon olive oil
1 garlic clove, chopped
mint
3 ounces of baby spinach
1 watermelon, diced
3 ounces of feta cheese

How to Cook Grilled Chicken, Watermelon and Spinach Salad

  1. Place the chicken breast onto the electric grill and grill it for 10-12 minutes.
  2. When ready, thinly slice the meat.
  3. Heat a skillet and roast the pine nuts.
  4. Take a small bowl and make the salad dressing.
  5. Combine the lime juice with honey, olive oil, chopped garlic, and fresh mint.
  6. Use a large salad bowl and throw in the spinach, diced watermelon, and grilled chicken.
  7. Break the feta cheese into small crumbles using your hands and add it into the salad.
  8. Pour over the previously made dressing.
