How to Cook Green Pea Soup With Raw Red Onion
- Heat the vegetable oil in a skillet and cook half of the red onion until it softens.
- Add the chicken stock and the frozen peas. Bring to a boil, then reduce the heat, cover the skillet, and simmer for 6-8 minutes.
- When the time’s up, add the pea and the liquid to a blender. Add the heavy cream (keep 2-3 tablespoons of heavy cream), salt, and pepper, and blend everything into a smooth soup.
- Serve the soup with heavy cream and diced onion on top.
