Ingredients Needed for Green Pea Soup With Raw Red Onion

2 tablespoons of vegetable oil
2 red onions, diced
2 cups of chicken stock
1 ½ cups of frozen peas
½ cup heavy cream
salt
pepper

How to Make Green Pea Soup With Raw Red Onion

  1. Heat the vegetable oil in a skillet and cook half of the red onion until it softens.
  2. Add the chicken stock and the frozen peas. Bring to a boil, then reduce the heat, cover the skillet, and simmer for 6-8 minutes.
  3. When the time’s up, add the pea and the liquid to a blender. Add the heavy cream (keep 2-3 tablespoons of heavy cream), salt, and pepper, and blend everything into a smooth soup.
  4. Serve the soup with heavy cream and diced onion on top.
