Some would argue salmon is the best tasting, most nourishing, and easiest to prepare of all fish. We agree, and if you do too, cook the fillets on a bed of roasted sweet potatoes, ginger, and lime. And for a richer umami experience drizzle soy sauce over the whole combo.

Ingredients Needed for Ginger Baked Salmon With Sweet Potatoes

1 sweet potato
1 tablespoon ginger, sliced
2 garlic cloves, halved
1 tablespoon sesame oil
¼ cup vegetable stock
2 tablespoons of coconut oil
2 teaspoons of lime juice
lime zest
½ red chili, sliced
14 ounces of salmon fillet, cut into 2 pieces
3 teaspoons of soy sauce
lime wedges, for garnishing

How to Make Ginger Baked Salmon With Sweet Potatoes

  1. Add the sweet potato slices, ginger, garlic, sesame oil, vegetable stock, coconut oil, lime juice, some lime zest, and the red chili to a 10 x 5-inch (25 cm x 12.5) baking tray. Roast for 25 minutes at 380⁰F/190⁰C.
  2. Remove from the oven and add the salmon fillets. Drizzle the soy sauce on top and roast for 10 minutes at 400⁰F/200⁰C.
  3. Serve garnished with lime wedges.
