When you have a bit of time on the weekends, it’s always nice to surprise your loved ones with a new recipe. So, why not try these flatbread pizzas, topped with different ingredients. We’ve tried a vegetarian version, with some nice veggies and a bit of mozzarella, and one with salmon, capers, and olives. Both are light and delicious!

Ingredients Needed for Flatbread Pizza Two Ways

dough :
0.25 ounce fresh yeast
1 teaspoon sugar
2 tablespoons of milk
1 ½ cups of flour
1 teaspoon baking powder
1 teaspoon salt
1 egg
¼ cup olive oil
pizza :
3.5 ounces of smoked salmon
1 tablespoon caper
6 olives, sliced
¼ cup mozzarella, shredded
pizza :
2 tablespoons of tomato sauce
3 mushrooms, sliced
¼ red bell pepper, thinly sliced
¼ yellow bell pepper, thinly sliced
6 olives, thinly sliced
4 cherry tomatoes, sliced into quarters
¼ cup mozzarella, shredded

How to Make Flatbread Pizza Two Ways

  1. Start with the dough. Add the yeast in a small bowl. Add the sugar and 1 tablespoon of milk in the bowl, and mix to dissolve the yeast.
  2. Add the flour into your mixer bowl. Add the baking powder, salt, liquid yeast, egg, and the remaining milk. Set your mixer at high speed and mix until all of the ingredients combine. Slowly pour the olive oil. After a few minutes, the dough should be sticky.
  3. Move it into a bowl and let it rise for 30 minutes.
  4. Spread flour on your working surface, and divide the dough into 2 equal parts.
  5. Preheat the oven to 350°F/175°C.
  6. Here is what you need to do. Use the tip of your fingers to stretch the dough until it is as thin as you like. Line a baking tray with parchment paper and place the flatbreads over it.
  7. For the first pizza: top it with salmon, capers, olives, and mozzarella.
  8. For the second pizza: top it with tomato sauce, mushrooms, bell peppers, olives, cherry tomatoes, and mozzarella.
  9. Slide the tray into the oven and bake the flatbreads for the next 20 minutes.
