1 teaspoon Dijon mustard
4-5 tablespoons extra virgin olive oil
4 endives, cored and sliced
⅓ cup almonds, coarsely chopped
3-4 ounces of Gorgonzola, cubes
How to Cook Endive and Almond Salad With Mustard Dressing
- Add the apple cider vinegar, Dijon mustard, salt, pepper, extra virgin olive oil in a blender and pulse until you make a thick dressing.
- Add the endive to a bowl.
- Add the almonds, Gorgonzola, and mustard dressing. Toss gently. Divide among four plates.
