1 cucumber
3 eggs, cut into quarters
3 tablespoons of greek yogurt
pepper
1 teaspoon mustard
salt
parsley
1 chili pepper s, slices

How to Make Egg Salad Cucumber Boats

  1. Cut the cucumber in half, and then split each half lengthwise. Scoop out the seeds with a spoon. Set aside while you prep the egg salad.
  2. Put the eggs in a bowl and mash them with a fork.
  3. Add the Greek yogurt, pepper, mustard, salt and chopped fresh parsley. Mix to combine the ingredients.
  4. Fill the cucumber boats with egg salad and garnish with chili slices.
