3 eggs, cut into quarters
3 tablespoons of greek yogurt
1 teaspoon mustard
1 chili pepper s, slices
How to Cook Egg Salad Cucumber Boats
- Cut the cucumber in half, and then split each half lengthwise. Scoop out the seeds with a spoon. Set aside while you prep the egg salad.
- Put the eggs in a bowl and mash them with a fork.
- Add the Greek yogurt, pepper, mustard, salt and chopped fresh parsley. Mix to combine the ingredients.
- Fill the cucumber boats with egg salad and garnish with chili slices.
