Egg and Veggie Spring Salad

When spring arrives, you can take a break from all those heavy meat dishes and try a vegetarian diet, even for a few weeks. So why not try this salad which is just right for a light meal? Bonus: add eggs to satisfy your hunger better!

Ingredients Needed for Egg and Veggie Spring Salad

½ lettuce
1 cucumber
1 oil ed egg
3 cherry tomatoes
½ lime
1 teaspoon olive oil
salt
pepper
½ cup yogurt

How to Cook Egg and Veggie Spring Salad

  1. Chop the lettuce and slice the cucumber.
  2. Slice egg in 4.
  3. Slice tomatoes in halves.
  4. Add ingredients in a large salad bowl.
  5. Squeeze lime juice over the salad.
  6. Add olive oil and season with salt and pepper.
  7. Mix all ingredients.
  8. Serve with yogurt dressing.
