The main ingredient of this dish will be beetroot, so keep in mind that it’s going to take a while to cook. That’s why we recommend pre boiling it, just so you can have a faster ride while making the soup. And if you want to kick it up a notch, just add some butter and heavy cream! They make just about everything better!

Ingredients Needed for Creamy Beet Soup

3 ounces of butter
salt
pepper
3 beetroots
1 cup vegetable stock
⅓ cup heavy cream

How to Make Creamy Beet Soup

  1. First, peel and chop the beetroot. Add it in a large saucepan and cover with water. Bring to a boil, then simmer it for 45 minutes or until the beetroot is done.
  2. Heat a saucepan and add the butter in order for it to melt, along with some salt and pepper.
  3. After it melts, add the boiled beetroot and vegetable stock. Bring to a boil, and let it simmer for about 5 minutes.
  4. Move the soup into a blender, and mix it with heavy cream and a pinch of salt.
  5. Serve it warm!
