3 beetroots
1 cup vegetable stock

How to Cook Creamy Beet Soup
- First, peel and chop the beetroot. Add it in a large saucepan and cover with water. Bring to a boil, then simmer it for 45 minutes or until the beetroot is done.
- Heat a saucepan and add the butter in order for it to melt, along with some salt and pepper.
- After it melts, add the boiled beetroot and vegetable stock. Bring to a boil, and let it simmer for about 5 minutes.
- Move the soup into a blender, and mix it with heavy cream and a pinch of salt.
- Serve it warm!
