Cranberry, Peanut, and Kale Salad

2 ounces of salad mix
3 ounces of kale
1 ounce black olive
2 tablespoons of dried cranberry
2 ounces of peanut
½ tablespoon olive oil
lemon zest for garnishing

You can add almost anything to a kale salad to make it more interesting and bursting with flavor. You can choose to make it crunchier by adding the peanuts, dried cranberries, and black olives. Not to mention salads are so easy to prepare and, don't forget, so healthy.




Add the salad mix, kale, black olives, cranberries, and peanuts to a bowl.


Season with salt and pepper and drizzle with olive oil. Toss using two spatulas, then grate some lemon zest on top.

Well, I love to eat! I guess I always did. Tasty foods, traditional foods, fast-foods, healthy foods and, again, not so healthy ones. You name it. However, in time I kind of built on this habit and, slowly but surely, I began to turn toward the Mediterranean cuisine and, occasionally, even the Mediterranean diet. I am a curious and inquisitive person. So, pretty soon, I started trying to recreate what I’ve tasted or seen.
