Cranberry, Peanut, and Kale Salad

You can add almost anything to a kale salad to make it more interesting and bursting with flavor. You can choose to make it crunchier by adding the peanuts, dried cranberries, and black olives. Not to mention salads are so easy to prepare and, don’t forget, so healthy.


2 ounces of salad mix
3 ounces of kale
1 ounce black olives
2 tablespoons of dried cranberries
2 ounces of peanuts
½ tablespoon olive oil
lemon zest for garnishing


  1. Add the salad mix, kale, black olives, cranberries, and peanuts to a bowl.
  2. Season with salt and pepper and drizzle with olive oil. Toss, then grate some lemon zest on top.
