1 cup cornmeal
salt
1 teaspoon baking soda
1 red onion, chopped
½ cup sweet corn
½ red bell pepper, chopped
fresh coriander, chopped
2 tablespoons of yogurt
¼ cup water
vegetable oil for frying
1 avocado, diced
1 tablespoon olive oil
1 teaspoon dried oregano
1 tablespoon red wine vinegar
1 teaspoon agave syrup

Steps

1
Done

Add the cornmeal in a large bowl.

2

Add salt, baking soda, and mix.

3

Add the red onion, sweet corn, bell pepper, coriander, and yogurt. Mix until the ingredients combine. The mixture may be a bit dry, so add a bit of water.

7
Done

Serve the cornmeal fritters with the guacamole sauce!

I guess I’ve always had a passion for cooking ever since I was a kid when I was mom’s little helper in the kitchen. Even though I wasn’t actually cooking, I was a picky eater, and I focused on bringing more flavor to her dishes, by adding extra herbs and spices I felt might enrich it. Time has passed, and I haven’t changed that much: I am now my girlfriend’s helper.
