Ingredients Needed for Coffee Cake Muffins

crumb mixture:
½ cup flour
¼ cup brown sugar
¼ cup sugar
1 teaspoon cinnamon
1 ounce butter, melted
muffin mixture:
1 cup flour
1 teaspoon cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
½ cup brown sugar
1 tablespoon instant coffee
½ cup milk
1 tablespoon olive oil
2 eggs

How to Make Coffee Cake Muffins

  1. For the crumb mixture, sift the flour through a strainer and place it in a large bowl.
  2. Add the sugar, brown sugar, cinnamon, and melted butter.
  3. Use your hands and mix until the mixture resembles small crumbs. Leave the mixture aside.
  4. For the muffin mixture, sift the flour through a strainer and place it in a large bowl. Add the cinnamon, baking powder, baking soda, and brown sugar. Mix.
  5. Separately, place the instant coffee in a large bowl. Add 2 tablespoons of milk, olive oil, and 2 eggs. Whisk everything until smooth.
  6. Pour the obtained liquid over the muffin mixture, while whisking vigorously. Also pour the remaining milk.
  7. Preheat the oven to 350°F/175°C.
  8. Place the mixture into individual muffin molds. Fill around 2/3 of the entire mold, leaving room for the crumb mixture. Add 2 tablespoons of the crumb mixture on top of each muffin.
  9. Bake the muffins for the next 25 minutes.

    1. Update: made 10 muffins, recipe says 8. overflowed in the pan. Tastes good, But needs someone to go over this recipe with a fine tooth comb. Only 2/3 of a cup of flour? Should’ve flagged me right there.
