Instead of your usual grilled chicken breast - which, let's face it, it doesn't have much taste - try this chicken cordon bleu! The chicken breast is stuffed with ham and cheese, then coated in breadcrumbs and baked to perfection in the oven! We've used fresh mozzarella for this recipe, but you can use low-moisture mozzarella as well.

Ingredients Needed for Chicken Cordon Bleu and Broccoli

1 chicken breast
chili flakes
pepper
salt
2 hams slices
1 ounce fresh mozzarella, slices
1 egg
2 tablespoons of milk
½ cup flour
½ cup breadcrumbs
1 teaspoon olive oil
5 broccoli florets

How to Make Chicken Cordon Bleu and Broccoli

  1. Preheat the oven to 360 degrees F/180 degrees C.
  2. Butterfly the chicken breast – slice the chicken horizontally, but don’t slice it all the way through to the other side; the idea is to open it like a book.
  3. Cover it with plastic wrap and tenderize the meat using a meat hammer. Remove the plastic wrap.
  4. Season the chicken breast with chili flakes, pepper, and salt.
  5. Add the ham slices and top with mozzarella.
  6. Sprinkle chili flakes, then roll the chicken breast.
  7. Make egg wash by whisking the egg with milk.
  8. Coat the chicken roll with flour, then with egg wash, and finally with breadcrumbs.
  9. Put the roll in a ceramic baking dish and drizzle some olive oil on it.
  10. Add in the same baking dish the broccoli florets.
  11. Drizzle some more olive oil.
  12. Season with pepper and chili flakes.
  13. Roast for 35 minutes.
  14. Slice the chicken roll and serve it with broccoli.
