Ingredients

3 chicken breasts
vegetable oil
1 tablespoon garlic powder
1 teaspoon pepper
½ tablespoon dried oregano
1 teaspoon salt
1 tablespoon fresh parsley, chopped
1 red onion, chopped
1 tomato, chopped
2 garlic cloves
1 tablespoon olive oil
1 teaspoon balsamic vinegar reduction
parmesan to taste
1 tablespoon vegetable oil

Cook the chicken breasts in vegetable oil on both sides, after sprinkling them with garlic powder, pepper, dried oregano, and salt. Cook them until they turn light brown. Set aside.

Mix the parsley, red onion, tomato and the crushed garlic cloves, into a bowl. Pour in the olive oil.

Add tomato salsa to each chicken breast.

Sprinkle with balsamic vinegar and shred parmesan to taste, before serving.
