Ingredients Needed for Chicken and Mushroom Curry

2 tablespoons of vegetable oil
9 ounces of chicken breast, thinly sliced
1 teaspoon ginger, chopped
1 teaspoon green curry paste
2 tablespoons of coconut paste
½ cup chicken stock
⅔ cup sour cream
½ lime
8 mushrooms, thinly sliced

How to Make Chicken and Mushroom Curry

  1. Heat the oil in a wok over medium-high heat. Add the chicken and cook it for 6-7 minutes, until golden.
  2. Add the ginger, green curry paste, and coconut paste.
  3. Pour the chicken stock and add sour cream. Reduce the heat and stir well. Simmer for 5 minutes on low-heat.
  4. Add the lime juice and mushrooms, and leave everything on heat for another 4-5 minutes, until the sauce thickens.
