These cheesy tequila watermelon bites bring the salty, sweet, and sour tastes together on a plate. Ingredients Needed for Cheesy Tequila Watermelon Bites

For the toast discs:
4 toast bread slices
1 tablespoon butter
2 teaspoons of dried oregano
For the watermelon:
4 ounces of watermelon pulp
2 teaspoons of tequila
1 tablespoon lemon juice
1 teaspoon red peppercorns
For the dressing:
2 tablespoons of olive oil
1 teaspoon lemon juice
1 tablespoon fresh mint, chopped
1 tablespoon balsamic vinegar
½ cup fresh goat cheese
1 tablespoon fresh mint, chopped
2 teaspoons of lemon zest

How to Make Cheesy Tequila Watermelon Bites

For the toast discs:
  1. Cut 16 mini-discs from the toast slices’ crumb using a 1 – 1.5-inch cookie cutter. Discard the crust.
  2. Melt the butter in a skillet over low heat. Add 1 teaspoon of dried oregano and mix it in.
  3. Add the mini-discs to the skillet and sprinkle the 2nd teaspoon of dried oregano over them. Fry them on both sides until golden brown. Set aside.
For the watermelon:
  1. In order to get the watermelon cylinders, you need to cut two 1.5 – 2 inches thick slices from a medium-sized watermelon. Remove the seeds and cut 16 cylinders from the pulp using a cookie cutter.
  2. Transfer them to a smaller bowl, then add the tequila, lemon juice, and red peppercorns. Mix until even, then marinate for 30 minutes.
For the dressing:
  1. Add the olive oil, lemon juice, and fresh mint to a small bowl. Mix them until even.
  2. Place the mini-discs on a flat plate and top them with the watermelon cylinders. Add crumbled goat cheese and season with the mint dressing. Garnish with balsamic vinegar.
