How to Make Cheesy Tequila Watermelon Bites
- Cut 16 mini-discs from the toast slices’ crumb using a 1 – 1.5-inch cookie cutter. Discard the crust.
- Melt the butter in a skillet over low heat. Add 1 teaspoon of dried oregano and mix it in.
- Add the mini-discs to the skillet and sprinkle the 2nd teaspoon of dried oregano over them. Fry them on both sides until golden brown. Set aside.
- In order to get the watermelon cylinders, you need to cut two 1.5 – 2 inches thick slices from a medium-sized watermelon. Remove the seeds and cut 16 cylinders from the pulp using a cookie cutter.
- Transfer them to a smaller bowl, then add the tequila, lemon juice, and red peppercorns. Mix until even, then marinate for 30 minutes.
- Add the olive oil, lemon juice, and fresh mint to a small bowl. Mix them until even.
- Place the mini-discs on a flat plate and top them with the watermelon cylinders. Add crumbled goat cheese and season with the mint dressing. Garnish with balsamic vinegar.
