Cheesy Potato and Ham Frittata

Ingredients

4 tablespoons of vegetable oil
1 large onion , diced
2 medium potatoes , diced
6 eggs
salt
pepper
5 ounces of emmental slices, halved
5 ounces of ham slices, quartered

Heat 2 tablespoons of oil in a skillet over low heat. Add the onion and potatoes. Cook and stir until softened. Set aside.

Add the eggs and cooked potatoes to a bowl, season with salt and pepper, and mix.

Heat the remaining 2 tablespoons of vegetable oil in a skillet over low heat. Pour in half of the egg and cooked potato mixture using a ladle. Layer the Emmental slices alternatively with quartered slices of ham, on top of the mixture. Cover all with the remaining mixture.

Cook until golden brown on one side or up to 10 minutes. Don’t stir. Carefully flip it on the other side and cook for up to 5 minutes. Try not to overdo it.

Well, I love to eat! I guess I always did. Tasty foods, traditional foods, fast-foods, healthy foods and, again, not so healthy ones. You name it. However, in time I kind of built on this habit and, slowly but surely, I began to turn toward the Mediterranean cuisine and, occasionally, even the Mediterranean diet. I am a curious and inquisitive person. So, pretty soon, I started trying to recreate what I’ve tasted or seen. At first, this proved to be hard work for my better half, as she supervised my new experiments. But lately, results really started to show, so wish me luck!
