Cheddar and Chicken Stuffed Mashed Potato Balls

Cheddar and chicken have a nice ring to them together, don’t they? Make these mashed potato balls with Cheddar and chicken as a stuffing and then fry them until they’re crispy and golden on the outside. The insides turn out to be soft and cheesy, just the way we love them. And they go great with a salad or dip, too.

Ingredients

1 ½ cups of mashed potato
pepper
½ teaspoon paprika powder
salt
vegetable oil
1 red onion, chopped
2 garlic cloves, sliced
2 chicken thighs s, chopped
1 red bell pepper, chopped
0.5 tea spoon herb mix
½ teaspoon chili powder
1 egg
2 tablespoons of milk
½ cup breadcrumbs

Ingredients

Steps

1
Done

Add the mashed potatoes in a bowl.

2
Done

Add pepper, paprika powder, and salt. Combine everything and set aside.

3
Done

Heat about 3 tablespoons of vegetable oil in a skillet and cook the red onion until it softens.

4
Done

Add the garlic and chicken thighs pieces and fry them until they start to turn golden.

5
Done

Add the bell pepper, herb mix, and chili powder. Stir and cook further, until the meat is cooked-through and the bell pepper is soft. Set aside.

6
Done

Take some mashed potato mixture in your hand and roll it into balls of equal size. Rub your hands with a little olive oil to keep the chilled mashed potatoes from sticking to your fingers, then flatten each potato ball slightly, cup them in your hands and fill with 1 1/2 tablespoons of meat filling. Also add some shredded Cheddar. Shape back into a ball. Repeat until all of the balls have been filled. Place them on a plate.

7
Done

Whisk the egg with milk to make some egg wash.

8
Done

Coat each stuffed mashed potato ball with egg wash and breadcrumbs.

9
Done

Heat some vegetable oil for frying in a skillet and add the mashed potato balls in it.

10
Done

Fry on all sides until golden and crispy.

I guess I’ve always had a passion for cooking ever since I was a kid when I was mom’s little helper in the kitchen. Even though I wasn’t actually cooking, I was a picky eater, and I focused on bringing more flavor to her dishes, by adding extra herbs and spices I felt might enrich it. Time has passed, and I haven’t changed that much: I am now my girlfriend’s helper.
