Cheddar and Beer Soup

This Cheddar and beer soup really is for the brave! That is because it is like nothing you’ve ever tried before. It’s strong and interesting flavors come from using Cheddar, bechamel sauce, beer, garlic, and smoked paprika. Not the most usual ingredients for soup, but these ones here are definitely worth a try.

Ingredients

1 tablespoon butter
1 tablespoon flour
1 cup milk
1 ½ tablespoons of olive oil
1 onion, chopped
1 red bell pepper, chopped
½ teaspoon smoked paprika
2 garlic cloves
4 cups of beef stock
2 cups of beer
1 cup cheddar, shredded

Steps

  1. Heat a skillet over medium heat, add the butter in it and melt it.
  2. Add the flour and whisk vigorously until you obtain a pale-yellow colored mixture.
  3. Slowly add the milk while whisking. Keep whisking until you obtain a smooth, thick, and creamy mixture.
  4. Heat the olive oil in a skillet over medium heat. Add the onion and bell pepper. Cook for 2 minutes.
  5. Season with smoked paprika and garlic.
  6. Pour the beef stock and beer. Bring to a boil and simmer for 20 minutes.
  7. Add the bechamel and shredded Cheddar.
  8. Simmer for 10 more minutes.
