Ingredients

2 tablespoons of olive oil
1 onion, diced
1 carrot, sliced
2 garlic cloves, sliced
¼ celery root, diced
1 red bell pepper, sliced
10 ounces of chicken breast, cubed
sea salt
pepper
3 cups of chicken stock
cup hot sauce

Heat the olive oil in a large pot and add the onion, carrot, garlic, celery, and bell peppers. Cook until soft.

When the vegetables are soft, add the chicken. Cook until the chicken is browned, then add sea salt, and pepper. Stir to mix well and cook until the chicken turns opaque-white.

Add the chicken stock and hot sauce and bring to a boil. Reduce to a simmer, and cook on low heat for 30 minutes, until the chicken pieces are cooked through.
