Beef Tripe Soup

But, if you leave your thoughts behind and decide to give it a try, you will find that it is actually a worth-trying ingredient. Here we give you a recipe for beef tripe soup, that is quite popular in Eastern Europe and the Middle East, which welcomes you with a wide array of strong flavors.

Ingredients Needed for Beef Tripe Soup

12 cups of beef stock
1 parsnip, sliced
4 carrots
2 onions
2 pounds of beef tripe
5 egg yolks
1 cup sour cream
4 garlic cloves, crushed
salt
pepper

How to Cook Beef Tripe Soup

  1. Fill a 3-liter saucepan with the beef stock.
  2. Bring to a boil and add the parsnip, carrot, and onion. Boil for 25 minutes.
  3. Remove the veggies with a slotted spatula.
  4. Add the beef tripe and cook for 25 minutes.
  5. Whisk the eggs yolks with sour cream.
  6. Add the garlic and 1/2 cup of the tripe stock.
  7. Mix the mixture until smooth and slowly pour it into the stock, while stirring.
  8. Season the soup with salt and pepper.
  9. Serve the soup warm with extra sour cream and chili.

  1. I make Italian style tripe and it is really delicious. I rinse the tripe before putting it in the water and Boil the tripe till almost done and put aside some of the hot tripe water. then add the tripe to home made Italian spaghetti sauce and a cup or more of the tripe water so it is more like a soup. Not too much water, just enough to make it a little soupy so you can dip Italian bread into the sauce. and tripe.
    Top with parmesan cheese and add salt and pepper to your taste.
