Beef Meatballs with Sweet Pepper Rice

Rice and meatballs go together like a charm. So, first, for this main dish, let’s bring together rice and sweet pepper and flavor them with beef stock and oregano. Next, let’s season the ground beef with garlic and, again, with oregano; you can even give it an acidic touch, like we did, by tossing in lemon zest.

Ingredients

For the rice:
2 tablespoons of vegetable oil
1 large onion, diced
1 sweet pepper, julienned
salt
pepper
1 teaspoon dried oregano
1 cup rice
2 cups of beef stock
For the meatballs:
1 pound ground beef
2 eggs
2 garlic cloves, crushed
1 teaspoon lemon zest
1 teaspoon dried oregano
salt
pepper
vegetable oil
fresh parsley, chopped (for garnishing)

For the rice: Heat the vegetable oil in a pot over low heat, then add the onion. Cook and stir until tender.

Add the sweet pepper and dried oregano. Season with salt and pepper then cook and stir for 2-3 minutes.

Add the rice and stir for 1 minute or so. Add the beef stock and bring to a boil. Cover with the lid and boil for 8 minutes. Remove the lid, stir once or twice and remove from heat.

For the meatballs: Add the ground beef, eggs, crushed garlic, lemon zest, and dried oregano to a bowl. Season with salt and pepper and mix until even using a spatula.

Start forming meatballs with the beef mixture. We've got 16 of them.

Fill a skillet halfway with oil and heat it over medium heat. Add the meatballs and fry them for 3 minutes, taking care to turn them on all sides in the process. Remove from heat.

Layer the cooked rice inside an 11 x 7 x 2 inches (28 x 18 x 5 cm) baking dish. Add the fried meatballs on top. Bake for 15 minutes at 380⁰F/190⁰C.

Garnish with fresh parsley.
