Ingredients Needed for Beef Meatballs With Sweet Pepper Rice
For the rice:
2 tablespoons of vegetable oil
1 large onion, diced
1 sweet pepper, julienned
salt
pepper
1 teaspoon dried oregano
1 cup rice
2 cups of beef stock
For the meatballs:
1 pound ground beef
2 eggs
2 garlic cloves, crushed
1 teaspoon lemon zest
1 teaspoon dried oregano
salt
pepper
vegetable oil
fresh parsley, chopped (for garnishing)
How to Make Beef Meatballs With Sweet Pepper Rice
- For the rice:
Heat the vegetable oil in a pot over low heat, then add the onion. Cook and stir until tender.
- Add the sweet pepper and dried oregano. Season with salt and pepper then cook and stir for 2-3 minutes.
- Add the rice and stir for 1 minute or so. Add the beef stock and bring to a boil. Cover with the lid and boil for 8 minutes. Remove the lid, stir once or twice and remove from heat.
- For the meatballs:
Add the ground beef, eggs, crushed garlic, lemon zest, and dried oregano to a bowl. Season with salt and pepper and mix until even using a spatula.
- Start forming meatballs with the beef mixture. We’ve got 16 of them.
- Fill a skillet halfway with oil and heat it over medium heat. Add the meatballs and fry them for 3 minutes, taking care to turn them on all sides in the process. Remove from heat.
- Layer the cooked rice inside an 11 x 7 x 2 inches (28 x 18 x 5 cm) baking dish. Add the fried meatballs on top. Bake for 15 minutes at 380⁰F/190⁰C.
- Garnish with fresh parsley.
