This is a moussaka, a dish originated in the Balkans and Eastern Mediterranean. Traditionally, it’s made by layering eggplant or potato with ground meat and then oven-baked to perfection! The moussaka it’s great by itself, but if you want to try a different approach, roll the meat in eggplant and prepare for a whole new experience!

Ingredients Needed for Beef and Eggplant Moussaka Rolls

2 eggplants
salt
pepper
¼ cup olive oil
vegetable oil for frying
1 onion
10 ounces of ground beef
⅔ cup tomato sauce
3.5 ounces of cheddar cheese

How to Make Beef and Eggplant Moussaka Rolls

  1. Preheat the oven to 400 degrees F/200 degrees C.
  2. Thinly slice the eggplant longitudinally. You should make about 8-10 slices.
  3. On both sides of each eggplant slice, sprinkle salt and pepper, and pour some olive oil.
  4. Grill the eggplant slices.
  5. Dice the onion.
  6. Heat some vegetable oil in a skillet and cook the onion until it turns translucent.
  7. Add the ground beef. Season with salt, pepper, and cumin powder.
  8. Cook until the meat turns brown.
  9. Pour the tomato sauce, mix, and cook a few more minutes.
  10. Shred the Cheddar cheese.
  11. On each grilled eggplant slice, put some beef mixture (about 2 tablespoons) and some shredded Cheddar (about 1 tablespoon).
  12. Roll the beef and cheese in eggplant slices.
  13. Put the rolls in a small ceramic baking tray and bake them for 35 minutes.
