BBQ Chicken Quesadilla

Quesadillas are pretty easy to make. All you have to do is fill a tortilla wrap with a mixture of meat and vegetables. Then you add cheese (that’s what the queso in quesadilla is for). Heat everything in your skillet and you’re good to go. If this is the first quesadilla you’re making, start with this recipe that uses BBQ chicken.

Ingredients

10 ounces of chicken breast
cup vegetable oil
salt
pepper
1 red onion, chopped
¼ cup barbecue sauce
2 tortilla wraps
cup low-moisture mozzarella, shredded
cup cheddar cheese, shredded

Ingredients

Steps

1
Done

Heat half of the vegetable oil in a skillet and add the chicken breast in it.

2
Done

Season with salt and pepper.

3
Done

Fry the chicken breast on both sides until it turns golden.

4
Done

When ready, place the chicken breast on your cutting board and cut it into thin slices.

5
Done

Heat the remaining vegetable oil in another skillet and fry the red onion in it.

6
Done

Cook until the onion softens, then add the chicken slices.

7
Done

Add the barbecue sauce and stir. Cook for 2-3 more minutes, then set aside.

8
Done

Take a clean skillet and heat it on the stove.

9
Done

Prepare for making 2 quesadillas:

10
Done

Divide the Cheddar and mozzarella into 4 equal quantities.

11
Done

Place one tortilla wrap into the skillet. Add one layer of Cheddar and mozzarella on one side of the tortilla wrap. Add half of the chicken mixture, then another layer of Cheddar and mozzarella.

12
Done

Cook for about 30-60 seconds. When the cheese starts melting, fold the tortilla wrap over the filling, press down a little, then turn it over and cook for 30 more seconds.

13
Done

Do the same with the second quesadilla, using the remaining ingredients.

I guess I’ve always had a passion for cooking ever since I was a kid when I was mom’s little helper in the kitchen. Even though I wasn’t actually cooking, I was a picky eater, and I focused on bringing more flavor to her dishes, by adding extra herbs and spices I felt might enrich it. Time has passed, and I haven’t changed that much: I am now my girlfriend’s helper.
