Let's play with pancakes! We can certainly make them more off the beaten path by blending the pancake mix with baby spinach, banana, almond milk, and peanut butter. Flavor the batter with vanilla and cinnamon and start making pancakes. When you're done, serve them garnished with honey and banana slices.

Ingredients Needed for Banana and Baby Spinach Pancakes

1 cup baby spinach
1 banana
½ cup almond milk
1 tablespoon peanut butter
1 teaspoon vanilla extract
1 teaspoon cinnamon
1 cup pancake mix (store-bought)
olive oil
1 tablespoon honey for garnishing

How to Make Banana and Baby Spinach Pancakes

  1. Blend the baby spinach, banana, almond milk, peanut butter, vanilla extract, and cinnamon together. Add the pancake mix and blend more.
  2. Spray some olive oil on the bottom of a pan over low heat and start making pancakes using the batter. Use a large cooking spoon to pour some batter into the pan and fry the pancakes on both sides until golden brown. We’ve got six of them.
  3. Serve them on a plate, garnished with honey and banana slices.

  1. My own personal choice is I’d probably omit the”baby spinach “.. not much of a green leafy eater
    .lol..
