Ingredients Needed for Banana and Baby Spinach Pancakes
1 cup baby spinach
1 banana
½ cup almond milk
1 tablespoon peanut butter
1 teaspoon vanilla extract
1 teaspoon cinnamon
1 cup pancake mix (store-bought)
olive oil
1 tablespoon honey for garnishing
How to Make Banana and Baby Spinach Pancakes
- Blend the baby spinach, banana, almond milk, peanut butter, vanilla extract, and cinnamon together. Add the pancake mix and blend more.
- Spray some olive oil on the bottom of a pan over low heat and start making pancakes using the batter. Use a large cooking spoon to pour some batter into the pan and fry the pancakes on both sides until golden brown. We’ve got six of them.
- Serve them on a plate, garnished with honey and banana slices.
My own personal choice is I’d probably omit the”baby spinach “.. not much of a green leafy eater
