Let's play with pancakes! We can certainly make them more off the beaten path by blending the pancake mix with baby spinach, banana, almond milk, and peanut butter. Flavor the batter with vanilla and cinnamon and start making pancakes. When you're done, serve them garnished with honey and banana slices.

Blend the baby spinach, banana, almond milk, peanut butter, vanilla extract, and cinnamon together. Add the pancake mix and blend more.

Spray some olive oil on the bottom of a pan over low heat and start making pancakes using the batter. Use a large cooking spoon to pour some batter into the pan and fry the pancakes on both sides until golden brown. We’ve got six of them.

Serve them on a plate, garnished with honey and banana slices.

Well, I love to eat! I guess I always did. Tasty foods, traditional foods, fast-foods, healthy foods and, again, not so healthy ones. You name it. However, in time I kind of built on this habit and, slowly but surely, I began to turn toward the Mediterranean cuisine and, occasionally, even the Mediterranean diet. I am a curious and inquisitive person. So, pretty soon, I started trying to recreate what I’ve tasted or seen. At first, this proved to be hard work for my better half, as she supervised my new experiments. But lately, results really started to show, so wish me luck!
