Ingredients Needed for Banana and Cinnamon Muffins

1 cup flour
2 teaspoons of cinnamon
1 teaspoon baking powder
½ cup brown sugar
2 bananas
1 egg
1 teaspoon coconut oil
1 teaspoon vanilla extract
½ cup milk

For serving:

apricot jam
orange zest

How to Make Banana and Cinnamon Muffins

  1. Preheat the oven to 360°F/180°C.
  2. Sift the flour through a strainer and place it in a large bowl.
  3. Add the 1 teaspoon of cinnamon, baking powder, and brown sugar. Mix.
  4. Separately, add the bananas in a large bowl and mash them with a fork. Add the remaining cinnamon, egg, coconut oil, vanilla extract, and half of the milk. Mix it until smooth.
  5. Mix the obtained wet mixture with the dry flour mixture. Whisk vigorously and slowly pour the remaining milk. Whisk everything until smooth.
  6. Place the mixture into individual muffin molds, and bake them for the next 25 minutes.
  7. Top the muffins with apricot jam, orange zest, and a few more banana slices if you want.
