Baked Egg Fritters

Have you had enough fried eggs for breakfast? Think different! Make some egg white fritters, with bacon and Parmesan. Then, top them with yolks. Ready, steady, bake!

Ingredients Needed for Baked Egg Fritters

2 ounces of bacon
1 tablespoon vegetable oil
4 eggs
1 tablespoon grated parmesan
1 teaspoon chopped chives

How to Cook Baked Egg Fritters

  1. Preheat the oven to 350 degrees F/175 degrees C.
  2. Cut in small pieces the bacon.
  3. Heat the vegetable oil and fry the bacon.
  4. Separate the yolks from the egg whites.
  5. Use a mixer to beat the egg whites until foamy.
  6. Add the grated parmesan, the fried bacon, and the chives. Mix them with the egg whites.
  7. Put a parchment paper on a baking tray.
  8. Put the egg white mixture in the tray using a spoon and make 4 fritters.
  9. Bake the fritters for 10 minutes.
  10. Remove them from the oven and put one yolk in the center of each fritter.
  11. Bake for 8 more minutes.
  12. Before you serve the fritters, sprinkle some paprika powder on top.
