5 skinless, boneless chicken thighs (13-15 ounces of meat)
½ medium yellow bell pepper, chopped
3 ounces of cherry tomatoes
4 garlic cloves
salt
pepper
1 teaspoon Italian seasoning, store-bought
1 tablespoon olive oil
¾ cup chicken stock
