1 broccoli head
1 onion, chopped
½ cup fresh parsley
3 tablespoons of breadcrumbs
- Fill a saucepan halfway with water and bring it to a boil. Add the broccoli cut into florets and parboil it for about 2-4 minutes. Remove the broccoli from the hot water, and pat it dry using paper towels.
- Add the cooked broccoli, onion, fresh parsley, breadcrumbs, egg, salt, and pepper to a blender. Blend everything into a coarse paste.
- Line a baking tray with parchment paper. Shape the broccoli mixture into tots, and place them on the tray.
- Drizzle some olive oil over the broccoli tots. Bake them in the oven for 35 minutes at 380˚F/190˚C. Serve them with your favorite sauce!
