Gazpacho is not only an easy-to-make dish but very healthy, too. Try this: blend avocado, cucumber, and spring onion together with yogurt, flavor with coriander, lime, and chili and there you have it. You can serve it as is or use it as a dip for nachos! It's your call.

Ingredients Needed for Avocado Gazpacho

1 avocado
1 large English cucumber, sliced
1 spring onion, chopped
½ cup fresh coriander
1 cup beef stock
1 cup yogurt
1 green chili, chopped
1 teaspoon salt
pepper
lime juice
lime zest

For garnishing:

nachos
goat cheese
red chili
fresh parsley
lemon

How to Make Avocado Gazpacho

  1. Add the avocado, cucumber, spring onion, coriander, beef stock, yogurt, and green chili to the blender bowl and blend.
  2. Add the mixture to a bowl, season with salt, pepper, lime juice, and lime zest. Mix using a spoon or a spatula. Cover with plastic wrap and refrigerate for 1 hour.
  3. Serve with nachos and lemon wedges and garnish with goat cheese, chili, and fresh parsley.
