1 large English cucumber, sliced
1 spring onion, chopped
½ cup fresh coriander
1 cup beef stock
1 cup yogurt
1 green chili, chopped
1 teaspoon salt
How to Cook Avocado Gazpacho
- Add the avocado, cucumber, spring onion, coriander, beef stock, yogurt, and green chili to the blender bowl and blend.
- Add the mixture to a bowl, season with salt, pepper, lime juice, and lime zest. Mix using a spoon or a spatula. Cover with plastic wrap and refrigerate for 1 hour.
