1 tablespoon melted butter
8 ounces of asparagus (approximately 13 stalks)
1 tablespoon olive oil
salt
3 ounces of goat cheese , crumbled
1 ounce pine nuts

Coat a 8 x 8 x 2 inch (20 x 20 x 5 cm) baking dish with melted butter.

Add the asparagus, drizzle it with olive oil, season with salt, add the crumbled goat cheese, and sprinkle the pine nuts over. Bake for 10 minutes at 400⁰F/200⁰C.

Well, I love to eat! I guess I always did. Tasty foods, traditional foods, fast-foods, healthy foods and, again, not so healthy ones. You name it. However, in time I kind of built on this habit and, slowly but surely, I began to turn toward the Mediterranean cuisine and, occasionally, even the Mediterranean diet. I am a curious and inquisitive person. So, pretty soon, I started trying to recreate what I’ve tasted or seen.
