Apple, Quinoa and Blue Cheese Salad

Ingredients

For the salad dressing:
1 tablespoon mustard
1 tablespoon strawberry jam
1 teaspoon sugar
1 tablespoon red wine vinegar
1 tablespoon olive oil
1 teaspoon onion powder
1 teaspoon poppy seeds
½ teaspoon salt
For the salad:
1 ounce almonds
1 ounce pumpkin seeds
3.5 ounces of salad mix
2 tablespoons of dried cranberries
1 avocado, diced
5 ounces of cooked quinoa
1 apple, diced
1 ounce blue cheese, cubed

You can start with the dressing. Add all of the ingredients in a blender and blend them until smooth.

Heat a skillet over medium heat, and add the almonds and pumpkin seeds.

Serve with the dressing and the blue cheese on top!

I guess I’ve always had a passion for cooking ever since I was a kid when I was mom’s little helper in the kitchen.
