The term "galette" describes a type of round, flat cake often served in France. The most famous one is the Galette du Rois (king's cake) which is often served on the day of Epiphany. Using this as inspiration, we've made an autumn version of the galette, with apples and pumpkin as the main stars.

Ingredients Needed for Apple and Pumpkin Galette


For the crust:

1 ½ cups of flour
2 tablespoons of sugar
½ teaspoon salt
2 tablespoons of butter
½ cup water

For the filling:

1 teaspoon olive oil
7 ounces of pumpkin
3 tablespoons of flour
2 tablespoons of sugar
2 tablespoons of brown sugar
1 teaspoon cardamom
1 teaspoon cinnamon
2 apples, thinly sliced
1 tablespoon rum
2 tablespoons of melted butter, for topping
2 tablespoons of brown sugar, for topping

How to Make Apple and Pumpkin Galette

  1. Add the flour in your food processor. Add the sugar, salt, and start mixing.
  2. Add the butter and pour the water. Keep mixing with the food processor until you obtain a smooth dough.
  3. Wrap the dough in foil and let it rest for 30 minutes.
  4. Add the pumpkin in a baking tray and pour a small drizzle of olive oil. Slide the tray into the oven and cook the pumpkin for 20 minutes at 380 degrees F/190 degrees C.
  5. Next, grab a large bowl and start adding the flour, sugar, brown sugar, cardamom, cinnamon, and a pinch of salt.
  6. Add the apple slices, roasted squash and mix well.
  7. Next, dust your working space with flour, grab the dough and level it with a rolling pin.
  8. Roll out the dough to about a 12 inches (30 cm) diameter and transfer to a parchment lined baking sheet. Spread the apple and pumpkin in the center, leaving a 2 inches (5 cm) border around.
  9. Gather and fold the dough up around the sides to secure the filling.
  10. You can spread some melted butter on the sides and sprinkle some powdered sugar.
