Ingredients Needed for Almond Zucchini Fritters

1 zucchini
salt
½ cup green peas
2 spring onions, thinly sliced
pepper
¼ teaspoon lemon zest
2 eggs
5 fresh mint leaves
2 tablespoons of fresh parsley, chopped
½ cup almond flour
2 tablespoons of olive oil

How to Make Almond Zucchini Fritters

  1. Shred the zucchini and add it into a bowl. Salt it, mix through, and set it aside for 10 minutes to leave its moisture. Squeeze out all the moisture from the zucchini with your hands, then move the shredded zucchini to another bowl.
  2. Add the green peas, spring onion, salt and pepper by taste, lemon zest, eggs, mint leaves, parsley, and almond flour. Stir with a spoon to combine everything. If it’s necessary, add more almond flour to make sure the mixture holds together well.
  3. Heat olive oil into a skillet. Add zucchini mixture into the skillet using a spoon, then press a little to give it a fritter shape. Cook the fritters on medium-heat in a for 2-3 minutes on each side or until cooked through.
