Wine and Food Pairings to Try This Fall

Published by

Although any time of the year is good for drinking wine, the fall months are the wine time par excellence. And because good wine calls for good food let us offer you six wine and food pairing suggestions.

First the pasta. If your pasta is cheesy and it has white meat, you can go for a full-bodied white Chardonnay. If white is not your fave, you can also opt for a lighter red, like Pinot Noir.

On the other hand, having tomato pasta is a whole other matter, like the paccheri pasta with capers and tomato sauce. The slightly acidic tomatoes call for an equally mild sharp red (a medium-rich Mencia or a Sangiovese).

If red meat also comes with the tomato pasta, choose a rougher red wine. So, pair the pasta shells with minced meat and tomato sauce with a Cabernet Sauvignon.

Then, a fatty fish like salmon will always call for a rich white wine, again, like Chardonnay.

On the other hand, a light, fruity, and dry Sauvignon Blanc will beautifully complement the chicken cordon bleu.

Let’s wrap this up with a delicious chocolate and banana dessert. This calls for intense red wines, preferably of the sweet variety. You should drink your red dry only if your chocolate is dark.

Oh, and by the way, anything goes perfectly with a sparkling wine.

Casseroles have a unique way of turning us into huge fans. You can cook them without much work (all you need to do is add the ingredients in a baking tray) and they’re a nice way of mixing together different ingredients. This casserole has pasta, chicken, and two types of cheese, so it doesn't lack flavor or texture.

Paccheri Pasta With Capers and Tomato Sauce

Paccheri pasta is a gift for us from the Campania and Calabria regions in Italy. They have a tubular shape, which means they can be served with or without stuffing. We’ve tried them more often on the simpler side, with a rich tomato sauce, flavored with some capers, chili, and parsley. Since we were aiming for a light dinner, we got exactly what we needed!
