Unlike cupcakes, the muffins can be savory like these guys. Here we mixed zucchini, carrot, red onion, and red bell pepper into the dough. And we didn’t stop at vegetables, you know. They were followed swiftly by grated mozzarella.

Although almost any fish is just as good for this recipe, we chose trout. The secret to the tastiest bites hides in the batter. Use your favorite beer for this one and don’t forget to add just a tad of brown sugar to it. The dip is simple mayo flavored with thyme and lime.

9. Creamy Butternut Squash Soup With Toast

Let’s substitute croutons with star-shaped toasted bread for this super-creamy and warming butternut squash and other goodies soup. It’s dairy-free and nutty, like in ‘coconutty’. And you are just one step from making it vegetarian if you so desire. Replace the Cheddar with a rennet-free version and there you have it.
