⅓ cup coconut milk

For the baked salmon:

1 mango, diced
1 ounce figs, chopped (2-3 figs)
1 teaspoon lime zest
2 fresh rosemary sprigs

How to Make Baked Salmon With Tropical Fruit Sauce

  1. Preparing the fillet:

    Add the salmon fillets to a medium bowl. Add the olive oil, basil, lemon juice, and red wine. Season with salt and mix.

  2. Cover with plastic wrap and refrigerate for 30 minutes.
  3. For the fruit sauce:

    Add the pineapple, banana, orange juice, and coconut milk to a mixer bowl. Mix until smooth.

  4. For the baked salmon:

    Pour most of the fruit sauce in an oven-proof pan and add the salmon. Also add the diced mango, chopped figs, and pour the remaining sauce over them.

  5. Garnish with lime zest, add the rosemary sprigs, and season with pepper. Bake for 35 minutes at 400⁰F/200⁰C.

How to Make Salmon Provencal

  1. Preheat the oven to 360˚F/180˚C.
  2. Heat 2 tablespoons of olive oil in a stainless steel skillet and lay the salmon fillets in it, skin-side down. Season with salt. Cook the fillets for 30 seconds on each side, on high heat.
  3. Move the skillet to the oven and bake for 12 minutes.
  4. Fill a medium pot halfway with water, salt it, and bring it to a boil over medium-high heat. Immerse the tomato in boiling water for 25-35 seconds, then transfer it in cold water for 1 minute. Peel the tomato, remove its core, then dice it.
  5. Add the diced tomato, red onion, fresh basil, fresh tarragon, and spring onion to a bowl. Add 1 tablespoon of olive oil, lemon juice, and balsamic vinegar. Stir to combine everything.

How to Make Salmon Pastries With Spinach and Cheese

  1. Heat the vegetable oil in a skillet over medium heat.
  2. Add the red pepper, onion, spinach, and give it a good stir. Season with salt, pepper, and cook everything for 2 minutes.
  3. Next, mix the ricotta and cream cheese with a spatula in a large bowl. Season with salt, pepper, add some fresh dill and mix until smooth.
  4. Preheat the oven to 350 degrees F/175 degrees C.
  5. Line a baking sheet with parchment paper and lay the pastry over it.
  6. Divide the pastry into 2 sections. Add the spinach in the middle of each section, and top it with 1 salmon fillet.

  1. Add the minced salmon and chili paste to a smaller bowl and mix them. Set aside.
  2. Line a ramekin with plastic wrap. Add half of the cooked rice to it and press gently. Turn the ramekin upside down on a platter or smaller tray, remove it, and also discard the plastic wrap. Set aside the rice patty thus formed.
  3. Repeat the last step with the remaining rice using a ramekin or a smaller bowl.
