Ingredients Needed for Baked Salmon With Tropical Fruit Sauce
Preparing the fillet:
1 pound salmon fillet (2 fillets)
2 teaspoons of olive oil
1 tablespoon fresh basil, chopped
2 teaspoons of lemon juice
1 tablespoon red wine

For the fruit sauce:
1 ounce pineapple (2 slices)
1 banana
2 tablespoons of orange juice
⅓ cup coconut milk
For the baked salmon:
1 mango, diced
1 ounce figs, chopped (2-3 figs)
1 teaspoon lime zest
2 fresh rosemary sprigs

How to Make Baked Salmon With Tropical Fruit Sauce
- Preparing the fillet:
Add the salmon fillets to a medium bowl. Add the olive oil, basil, lemon juice, and red wine. Season with salt and mix.
- Cover with plastic wrap and refrigerate for 30 minutes.
- For the fruit sauce:
Add the pineapple, banana, orange juice, and coconut milk to a mixer bowl. Mix until smooth.
- For the baked salmon:
Pour most of the fruit sauce in an oven-proof pan and add the salmon. Also add the diced mango, chopped figs, and pour the remaining sauce over them.
- Garnish with lime zest, add the rosemary sprigs, and season with pepper. Bake for 35 minutes at 400⁰F/200⁰C.
