3 bananas, sliced
½ cup almond milk
2 tablespoons vegetable oil
2 tablespoons brown sugar
1 teaspoon vanilla extract
3 ounces flour
½ cup oat bran
1 teaspoon sugar
½ teaspoon baking powder
1 teaspoon cinnamon
salt

How to Make Banana Oat Bran Muffins

  1. Add the bananas to a bowl and mash them using a fork.
  2. Keep adding the almond milk, vegetable oil, brown sugar, and vanilla extract. Mix until even using the hand mixer.
  3. Add the flour, oat bran, sugar, baking powder, cinnamon, and salt to taste to another bowl.
  4. Mix them shortly using a spatula.
  5. Gradually add the flour mixture to the first bowl, while mixing.
  6. Use the mixture to fill the cups of a muffin pan.
  7. Top them with brown sugar and oat bran, then bake for 25 minutes at 360ºF/180ºC.

Ingredients Needed for Apple, Zucchini, and Walnut Bread

2 eggs
1 large apple, shredded
2 teaspoons olive oil
1 tablespoon maple syrup
â…“ cup coconut oil
6 ounces flour
1 teaspoon cinnamon
salt
1 teaspoon sugar
1 teaspoon baking powder
1 zucchini, shredded
7 ounces walnuts, crushed
1-ounce walnuts, crumbled

How to Make Apple, Zucchini, and Walnut Bread

  1. Crack the eggs in a bowl and whisk them.
  2. Mix in the shredded apple.
  3. Add the olive oil and maple syrup. Keep mixing while gradually adding the coconut oil. Set aside.
  4. Add the flour and baking powder to a bowl. Season with cinnamon, salt, and sugar. Mix shortly.
  5. Add the egg mixture and mix it in.
  6. Mix in the zucchini and 5-6 ounces of crushed walnuts.
  7. Dust a loaf pan with flour and transfer the batter into it.
  8. Spread the remaining crushed walnuts on top and garnish with the crumbled walnuts.
  9. Bake for 50 minutes at 325ºF/160ºC.
