Ingredients Needed for Mashed Sweet Corn Soup
2 ounces of butter
2 shallots, chopped
1 pound sweet corn
4 cups of water
salt
pepper
1 fresh thyme sprig
½ teaspoon paprika
lime zest
½ tablespoon olive oil
½ cup heavy cream
For garnishing:
lemon zest
1 teaspoon olive oil
How to Make Mashed Sweet Corn Soup
- Melt the butter in a cooking pot over low-medium heat, add the shallot and cook until tender. Add the sweet corn and water, season with salt and pepper, add the thyme sprig and bring to a boil. Simmer for 5-10 minutes.
- Add the cooked corn to a blender and blend, then strain it into a cooking pot using a strainer and a tablespoon. Remove the stringy parts in the strainer.
- Add the paprika, lime zest, and olive oil to the cooked corn cooking pot, place it on low-medium heat, and cook for 5-10 minutes. Also, add the heavy cream and whisk continuously in the process.
- Serve with a little olive oil and garnish with lime zest.
