Ingredients Needed for Chicken Tikka Masala With Basmati Rice


For the marinade:

10 ounces of chicken breast, chopped
1 cup yogurt
½ cup curry powder
salt
pepper
1 tablespoon lime juice

For the spicy tomato sauce:

2 ounces of olive oil
1 onion, chopped
2 garlic cloves, crushed
1 red chili, chopped
1 teaspoon cinnamon
1 teaspoon cumin powder
½ cup tomato sauce
1 cup water

For the platter:

2 teaspoons of vegetable oil
salt
pepper
½ cup yogurt
fresh coriander leaves, chopped (for garnishing)
1 cup cooked basmati rice

How to Make Chicken Tikka Masala With Basmati Rice

  1. For the marinade:

    Add the chicken breast, yogurt, curry powder, and lime juice to a bowl. Season with salt and pepper and mix to completely coat the chicken breast. Marinate overnight.

  2. For the spicy tomato sauce:

    Heat the olive oil in a skillet over low heat and add the onion. Cook and stir until tender.

  3. Add the garlic and chili. Cook and stir for 30 seconds. Add the cinnamon and cumin. Stir again for 30 seconds or so.
  4. Add the tomato sauce and water. Stir them in, bring to a boil, then simmer for 12-15 minutes. Continue to stir in the process. Set aside.
  5. For the platter:

    Skewer the marinated chicken breast cubes and drizzle vegetable oil on the grill.

  6. Grill them on all sides until cooked through, or for up to 15 minutes.
  7. Remove the cooked chicken from the skewers and add to the sauce. Season with salt and pepper, add the yogurt and mix until even.
  8. Serve the tikka masala garnished with coriander leaves on a platter, together with the basmati rice.

6 ounces of chicken breast
1 tablespoon vegetable oil

⅔ cup heavy cream
¼ lime
1 tablespoon mint syrup
6 mint leaves
1 cheddar slice
1 bacon slice
1 mozzarella slice
1 halloumi cheese slice

How to Make Cheesy Chicken Breast With Mint Sauce

  1. Preheat the oven to 400°F/200°C.
  2. Fry the bacon slice until golden and crispy.
  3. Grill the halloumi cheese, turning occasionally, for 3 to 4 minutes, until grill marks appear.
  4. Make superficial cuts on the chicken breast. They should be about 0.5 inch (1.25 cm) deep.
  5. Heat a skillet and add the vegetable oil. Start cooking the meat and season it with salt and pepper. Cook it for about 5 minutes per side.
  6. Remove the chicken, and in the remaining fat pour the heavy cream. Bring to a boil. Shred some lime zest, add the syrup and some fresh mint. Reduce the heat and give it a good stir. The sauce needs to be nice and smooth. Season it with salt and pepper.
  7. Place the chicken on a baking tray. Fill its empty pockets with bacon and all types of cheese.
  8. Bake it in the oven for the next 10 minutes.

4 potatoes
2 apples, shredded

How to Make Chicken, Potato and Apple Salad

  1. Peel the potatoes, and add them in a saucepan full of simmering water. Boil them for 25 minutes, until fork tender. When they’re ready, superficially mash them.
  2. In the meantime, slice the chicken breast into small chunks.
  3. Heat the vegetable oil in a skillet over medium heat. Add the chicken, and cook it until golden, for 7-8 minutes per side.
