How to Make Fig, Prosciutto and Cheese Sandwiches

  1. Evenly spread 1 teaspoon of mustard on one of the bread slices.
  2. Top it with half of the prosciutto, fig, and arugula.
  3. Add the shredded cheese. Spread half of the fig jam on another slice of bread and place it on top of the prosciutto.

For the lamb mixture:

1 tablespoon vegetable oil
1 medium onion, chopped
4 ounces of shimeji mushrooms
1 tablespoon soy sauce
salt
pepper
7 ounces of lamb tenderloin, chopped
1 tablespoon chili flakes
1 tablespoon fresh dill, chopped
1 tablespoon roasted pine nuts

For the sandwiches:

6 whole wheat breads slices
½ cup cream cheese
1 tablespoon roasted pine nuts for serving

How to Make Shimeji and Lamb Sandwiches

  1. For the lamb mixture:

    Heat the oil in a skillet over low heat, then add the onion. Cook and stir until tender.

  2. Add the Shimeji mushrooms, stir once or twice, add the soy sauce, season with salt and pepper, and stir again.
  3. Make some room in the middle of the skillet and add the lamb tenderloin. Cook and stir it separately for 1 minute or so, then cook and stir the whole mixture until the meat is brown.
  4. Add the chili flakes, dill, and roasted pine nuts. Stir for 1-2 minutes and remove from heat.
  5. Assemble the sandwiches:

    Spread the cream cheese on the slices of bread, add some lamb mixture, and garnish with more roasted pine nuts.

How to Make Middle Eastern Pita Sandwich

  1. Wash and shred the cucumber, then squeeze out the water from it.
  2. Add the yogurt sauce, shredded cucumber, red onion, mint, and dill in a small bowl. Season with salt, pepper, and mix with a fork until you get a tzatziki sauce.
  3. Add the cooked couscous into a separate bowl.
  4. Add the spring onion, cherry tomatoes, and cucumber. Add parsley, mint, and drizzle with olive oil and lemon juice. Mix with a tablespoon.

How to Make Mortadella and Cheese Muffuletta Sandwich

  1. Add the parsley, olives, capers, pickled bell pepper, and garlic to your food processor. Season with salt and pepper. Blend everything until smooth.
  2. Slice the bread loaf horizontally through the middle.
  3. Add 1-2 tablespoons of veggie salsa over the bottom side of the loaf and press it a bit with a spoon.
  4. Start topping the sandwich with the following toppings. Add the sliced cheese, half of the mortadella, mozzarella, salami, and the remaining mortadella.
  5. Cover with parchment paper and use a weight to press the sandwich. You can improvise with a saucepan filled with water like in the video.
