¾ cup sugar (10-12 tablespoons)
⅓ cup of water
¼ cup condensed milk
1 egg
salt
2 tablespoons of vegetable oil
1 teaspoon vanilla extract
1 teaspoon baking powder
1 teaspoon baking soda
2 tablespoons of milk
¼ cup pineapple juice
5 ounces of flour
4 pineapple slices
8 maraschino cherries
fresh mint for garnishing

How to Make Pineapple Upside-Down Mini Bundt Cakes

  1. Add 6 tablespoons of sugar and water to a pot over medium heat. Boil for 15 minutes.
  2. Remove from heat. Gradually whisk in the condensed milk. Set aside.
  3. Add the remaining sugar, the egg, and a pinch of salt to a bowl. Mix until smooth using a hand mixer.
  4. Keep adding the vegetable oil, vanilla extract, baking powder, baking soda, milk, pineapple juice, and flour. Mix more until smooth.
  5. Add 1 teaspoon of heavy cream and sugar mixture to each cup of a 4-cup Bundt muffin pan. Fit 1 pineapple slice into each cup.
  6. Transfer the batter to a piping bag and fill the remaining space of each cup. Bake for 20 minutes at 360⁰F/180⁰C.
  7. Remove from the oven and let it cool. Fit 2 cherries into the middle of each pineapple slice and top with the remaining heavy cream and sugar mixture. Garnish with fresh mint.

How to Make Rustic Apple Pie

  1. Add the flour, 2 tablespoons of sugar, some salt, and the butter to the dough mixer bowl and start mixing. Add the water in the process. Mix until you have a dough.
  2. Wrap the dough in plastic and refrigerate for 30 minutes.
  3. Add the sliced apples to a bowl. Add the remaining sugar and the cinnamon to another, smaller bowl and mix them. Pour this mixture over the apples, mix until they’re evenly coated, then set them aside.
  4. Flatten the dough using a rolling pin and transfer it to a 9-inch tart pan. Poke holes in it with a fork.
  5. Spread the apricot jam over the dough. Add the coated apples grouping them more towards the middle part of the dough.
  6. Fold the dough’s edges inwards partially covering the apples. Coat the folded parts of the dough with the whisked yolk.
  7. Bake for 45 minutes at 360⁰F/180⁰C.

How to Make Pork and Apple Pie

  1. Melt the goose fat with water in a pan while stirring.
  2. Add the flour and some salt to the dough mixer bowl. Shortly mix using a teaspoon, then make a well in the center and pour the melted fat.
  3. Start mixing and gradually add the milk in the process. Keep mixing until you have a dough. Let it rise for 1 hour.
  4. Heat 1-2 teaspoons of vegetable oil in a pan over medium-high heat and add the bacon. Cook and stir until translucent.
  5. Add the onion and garlic. Cook and stir for a few seconds.
  6. Add the pork mince and the cubed pork. Break the mince into smaller pieces. Cook and occasionally stir until browned.

  1. Take one apple and cut off a cap that is approximately 1/3 of its total height. Scoop out and discard the cores and some of its pulp leaving a 1/2-inch wall with the peel. Do the same with the other apple.
  2. Finely chop each cap’s pulp and transfer to a bowl. Add the oat flakes, cinnamon powder, vanilla extract, coconut oil, and honey. Mix until even.

  1. Line a baking dish with parchment paper and lay the bacon strips in there. Bake for 15 minutes at 360⁰F/180⁰C.
  2. Add the cheese, chives, and paprika to a bowl, together with the crumbled bacon. Season with salt and pepper and mix until even.
  3. Start shaping small balls out of this mixture. We’ve ended up with 9 of them.
  4. Fill a deeper pan half-way with vegetable oil and heat it. Coat the cheese balls with flour, whisked egg, and panko.
  5. Deep-fry the coated balls until golden brown. Transfer them on a paper towel-lined plate to absorb some of the oil.
  6. Skewer each cheese ball together with a slice of cucumber using a mini skewer. Garnish with julienned apple and serve on a tray.

How to Make Caramel and Pineapple Upside Down Mini-Cake

For the dough:
  1. Add the flour, baking soda, and vanilla sugar to a bowl. Season with salt, mix shortly and set aside.
  2. Add the butter and sugar to the dough mixer bowl and start mixing. Gradually add the eggs in the process.
  3. Add the sour cream and vanilla extract and mix more. Add the flour mixture and milk, then mix more until you have a dough.
For the caramel:
  1. Add the sugar to a saucepan over low heat. As it starts melting add the butter, too. Cook and continuously stir until caramelized.
Assembly the mini-cakes:
  1. Pour 1/3 of it into a ramekin. Tilt it to coat all its interior with caramelized sugar.
  2. Add 1 slice of pineapple and 3 raspberries, then add 1/3 of the dough. Do the same for the remaining ingredients and you’ll end up with 3 mini-cakes.
  3. Bake for 30 minutes at 380⁰F/190⁰C.
  4. Turn all of them upside down on a plate, let cool, then serve garnished with coconut flakes.
