  1. Preheat the oven to 360°F/180°C.
  2. Crack the eggs into a mixer bowl and start whisking them. Keep your mixer running, and slowly add 1 cup of sugar. Mix until the sugar is dissolved and you get a light and fluffy mixture. Add 1/2 cup of water and incorporate it in the mixture. Continue by gradually adding 1 cup of flour. Whisk for 2-3 minutes, until you get a smooth dough.
  3. Spread a touch of flour over a wooden board, grab the dough and press it with your hands. Level it with the help of a rolling pin. It should be around 0.4 inches (1 cm) thick. Use a cooking ring and make round shapes from your dough.
  4. Line a baking tray with parchment paper and add the cookies. Slide them in the oven for 25 minutes.

For the choux pastry:

1 cup milk
1 cup water
7 ounces of butter
1 ½ cups of flour
salt
6 eggs

For the whipped cream:

1 cup heavy whipping cream

How to Make Cream Puffs

  1. For the choux pastry:

    Add the milk, water, and butter to a medium cooking pot. Cook and stir until butter has melted. Set aside.

  2. Incorporate all the flour by stirring rapidly with a spatula. Put the cooking pot back on the stove and heat on medium, stirring, until a thin film forms on the bottom of the pan. Remove from heat.
  3. Transfer to a bowl, season with a little salt, and mix to cool down the dough using a hand mixer.
  4. Add the eggs one at a time and mix until smooth using a spatula. Refrigerate for 15 minutes.
  5. Transfer the choux dough to a piping bag with a 0.3-inch 1cm) circular tip. Line a baking tray with parchment paper.
  6. Holding the piping bag straight swirl and squeeze out batter until you make circular disks of batter (about 1 inch/3 cm in diameter). Twist slightly and pull up to finish, leaving a small point on top of a round mound of batter. Leave space between the batter mounds.
  7. Bake for 30 minutes at 380⁰F/190⁰C.
  8. For the whipped cream:

    Add the whipping cream and vanilla extract to a bowl. Start whipping using a hand mixer. Gradually, add the powdered sugar in the process. Mix until your whipped cream makes stiff peaks.

  9. When the choux pastry is cooled, cut each one horizontally in halves. Transfer the whipped cream to a piping bag and use it to fill the choux.
  10. If you want, dust cocoa powder on top.

How to Make Alaska Chocolate Mini Cakes

  1. Add the egg yolks and 1 cup of sugar to the mixer bowl. Mix until smooth.
  2. Add the vegetable oil and vanilla extract. Mix more.
  3. Add the flour, cocoa powder, baking powder, and baking soda to a strainer. Strain them together into the mixer bowl. Keep mixing until smooth. Add the water in the process.
  4. Add 6 egg whites and a dash of salt to a bowl. Whisk them until firm using the hand mixer. Add 1 cup of sugar in the process.
  5. Add this whipped cream to the yolk and cocoa mixture bowl. Mix until smooth using a spatula.
  6. Line a baking tray with parchment paper and pour this cocoa batter on it. Spread it evenly, then bake for 20 minutes at 360⁰F/180⁰C.
  7. Transfer the base on the work surface. Cut 8 discs using a 4-inch round cookie cutter and another 4 smaller ones with a 3-inch cutter.
  8. Take a smaller bowl, line it with a bigger plastic foil and spray it with just a tad of olive oil. Place one of the small discs inside it, then add a scoop of ice cream. Place a big disc on top, then finish with 4 scoops of ice cream and another big disc. Wrap the foil margins over them. Fill another 3 bowls in this manner with the remaining discs and ice cream. In the end, you should have 4 mini cakes.
  9. Freeze for 30 minutes.
  10. Add the remaining 6 egg whites and a dash of salt to a bowl. Whisk them until firm using the hand mixer. Add the remaining 2 cups of sugar in the process.
  11. Unwrap the frozen mini cakes and place them upside down on plates. Coat them with the whipped cream and brown a little using the kitchen blowtorch.
