2 tortilla wraps
4 lettuce leaves
salt
2 tablespoons of sweet corn
½ red onion, diced
1-ounce low moisture mozzarella, shredded
1 chili
1 tomato, sliced
4 tablespoons of yogurt

How to Make Leftover Turkey Tacos

  1. Heat vegetable oil in a skillet and slightly cook the turkey leftovers until golden-brown.
  2. Warm the tortilla wraps in another skillet without using oil.
  3. Place the tortilla wraps on a plate and lay the lettuce leaves on them.
  4. Divide the ingredients and add them on the tortilla wraps in the following order: cooked turkey, sweet corn, diced red onion, shredded mozzarella, chili slices (without seeds), tomato slices, and yogurt.
  5. Fold the tortilla wrap and serve!

Ingredients Needed for Taco Stuffed Avocado Shells

½ cup canned bean
2 tablespoons of sweet corn
1 green chili, sliced
7 ounces of cooked chicken breast, shredded
½ cup cheddar cheese, shredded
1 tablespoon taco seasoning
salt
pepper
3 avocados
½ cup ranch dressing
1 tablespoon lime juice

How to Make Taco Stuffed Avocado Shells

  1. Add the canned beans, sweet corn, green chili, chicken breast, Cheddar cheese, taco seasoning, salt, and pepper to a bowl. Stir to combine everything.
  2. Cut the avocados into halves and scoop out their flesh into a bowl. Fill the avocado peels with bean and chicken mixture. You’ll make 6 servings.
  3. Lay a baking tray with parchment paper, and place the stuffed avocados on it. Bake them for 15 minutes at 360ºF/180ºC.
  4. Meanwhile, mash the avocado pulp with a fork. Add the Ranch dressing, lime juice, salt, and pepper. Stir to make a paste.
  5. Serve the taco stuffed avocado shells with avocado and Ranch paste.
