1 potato
1 teaspoon butter
2 ounces of bacon
2 tablespoons of parsley, chopped
1 cheddar cheese stick
1 egg
2 tablespoons of milk
½ cup breadcrumbs
½ cup flour
vegetable oil for frying
butter for gracing the baking pan
breadcrumbs for coating the baking pan

How to Make Creamy Veggie Balls

  1. Peel and boil the potato with a pinch of salt.
  2. In a bowl, mash with butter and milk.
  3. Chop the bacon and add it in.
  4. Add the chopped parsley, and season with salt and pepper.
  5. Combine all the ingredients using a fork.
  6. Cut the Cheddar stick in 6 equal pieces.
  7. Whisk the egg and mix it with the milk, to make egg wash.
  8. With your hands, take a small quantity of potato mixture and form little balls, putting Cheddar cubes in the center.
  9. Coat each ball, by turn, with flour, egg wash, and breadcrumbs.
  10. Heat the vegetable oil in a skillet and deep fry the veggie balls.
  11. Serve the veggie balls warm and enjoy the melted cheese!

9 ounces of chicken mince
1 teaspoon salt
1 teaspoon dried oregano
1 teaspoon paprika powder
¼ teaspoon nutmeg, grated
1 teaspoon pepper
2 tablespoons of barbecue sauce
3.5 ounces of cheddar
½ cup flour
2 eggs, whisked
½ cup breadcrumbs
vegetable oil for frying

How to Make Cheddar Stuffed Chicken Meatballs

  1. Add the chicken mince in a large bowl.
  2. Season it with salt, oregano, paprika powder, nutmeg and pepper. Add the barbecue sauce.
  3. Mix everything with a spoon to ensure the ingredients are evenly combined.
  4. In the meantime, slice the Cheddar cheese in small cubes, around 1/3 inch (0.8 cm) thick.
  5. Pinch off a piece of the meat mixture and gently roll it between your hands to form a small meatball, around 1-2 inch (2,5 cm – 4 cm) in diameter. Make room in the middle using a finger and add 1 Cheddar cube. Shape the meatballs.
  6. Add the flour, whisked eggs, and breadcrumbs in 3 separate bowls. Coat the meatballs in flour, then in whisked eggs and finally in breadcrumbs.
  7. Heat the oil in a large skillet over medium-high heat and deep fry the meatballs for 8-10 minutes, until well browned on all sides.

4 tablespoons of vegetable oil
1 large eggplant, cubed
salt
pepper
4 medium potatoes, boiled
3 tablespoons of heavy cream
1 cup parmesan, grated
1 teaspoon active dry yeast
8 ounces of cheese, sliced (8 large slices)
½ cup cheddar, grated
1 spring onion, chopped

How to Make Cheesy Mashed Potato and Eggplant Casserole

  1. Heat 1 tablespoon of vegetable oil in a skillet over low heat and add the eggplant. Season with salt and pepper. Cook and stir until softened.
  2. Add the boiled potatoes and the remaining oil to a bowl. Season with salt and pepper. Add the heavy cream and mash them.
  3. Add the parmesan and active dry yeast. Mash more until even and smooth.
  4. Cover the bowl with plastic paper. Refrigerate for 15 minutes.
  5. Coat a 9-inch diameter baking dish with a very thin layer of oil using a cooking spray. Add a layer of mashed potatoes and spread it evenly using 1/2 of the whole quantity.
  6. Layer the cooked eggplant cubes on top. Cover with the cheese slices.
  7. Form the remaining mashed potatoes into balls. Place them on top of the cheese. Finally, top everything with grated cheddar.
  8. Bake for 45 minutes at 360⁰F/180⁰C. Serve garnished with spring onion.
