1 cup flour
½ cup walnut, crushed
2 tablespoons of almond flour
2 tablespoons of oat flakes
½ teaspoon baking powder
½ teaspoon salt

How to Make Salty Carrot Muffins

  1. Preheat the oven to 400 degrees F/200 degrees C.
  2. Sift the flour and put it in a medium-sized bowl.
  3. Add the walnuts, almond flour, oats, baking powder, and salt.
  4. Combine all the dried ingredients using a fork.
  5. Squeeze the shredded carrots to remove the excess water.
  6. Add the eggs and shredded carrots in the bowl with the dried ingredients.
  7. Mix until you combine all of the ingredients in a thick paste. If the mixture is to dry, add 2-3 tablespoons of water.
  8. Fill up a 12-cups muffin pan and bake the muffins for 20 minutes.

Ingredients Needed for Pan-Fried Crepe Rolls

⅔ cup flour
salt
3 eggs
⅔ cup milk
2 ounces of feta cheese
2 tablespoons of cream cheese
2 tablespoons of fresh herbs, chopped
1 teaspoon red peppercorns
½ teaspoon pepper oncino flakes
2 tablespoons of breadcrumbs
vegetable oil
1 cucumber, shredded
2 garlic cloves
⅔ cup sour cream

How to Make Pan-Fried Crepe Rolls

  1. Sift the flour and put it in a small bowl. Keep 2 tablespoons for later use.
  2. Add a pinch of salt, 2 eggs, and milk. Keep 2 tablespoons of milk for later use.
  3. Use a vertical mixer or a whisk to blend everything until you make a thin batter.
  4. Heat a few drops of vegetable oil in a skillet and make 4 crepes. Set them aside.
  5. Crumble the feta cheese and add it to a bowl and add the cream cheese over it. Mix with a fork.
  6. Divide the cheese mixture into 2 bowls.
  7. In one, add chopped fresh herbs.
  8. In the other one, add the red peppercorns and pepperoncino.
  9. Fill 2 crepes with herb cheese and 2 with spicy cheese.
  10. Fold the edges of each crepe, then roll them.
  11. Make egg wash by whisking the remaining egg and the remaining milk.
  12. Add the remaining tablespoons of flour in one bowl. Add the egg wash in a second bowl and the breadcrumbs in a third bowl.
  13. Coat each crepe with flour, egg wash, and breadcrumbs.
  14. Heat 2-3 tablespoons of vegetable oil in a skillet and fry the crepes on all sides until golden. Set them aside.
  15. In a separate bowl, mix the shredded cucumber, crushed garlic, salt, pepper, and sour cream.
  16. Serve the crepes with cucumber dip.

How to Make Preserved Lemons

  1. First slice the lemons in quarters.
  2. Thinly slice the chili peppers.
  3. Grab 2 jars, about 800 ml each.
  4. Add about 2-3 lemon quarters on the bottom of the jar. Sprinkle 1 teaspoon of salt and add half of the sliced chilies.
  5. Add more lemon quarters. Press down on them to release some of the juices. Fill the jar with about half of the lemon quarters. Top with 2 bay leaves.
  6. Secure this jar, and repeat the steps for the second one.
  7. Keep the preserved lemons for 1-2 weeks in a cold place!

2 cups of flour
1 teaspoon sugar
1 teaspoon active dry yeast
½ cup warm water
½ cup yogurt
1 tablespoon vegetable oil

How to Make Naan Flatbread

  1. Strain the flour into a bowl. Add the sugar and active dry yeast. Stir locally using a teaspoon, so that the sugar, yeast and some of the flour form an evenly mixed area. Add some of the warm water and mix some more.
  2. Add the remaining water and mix again. Let it rest for 10 minutes.
  3. Add the yogurt and mix all, then knead until you have a dough. Let it rest for 60 minutes.
  4. Spread some flour on your work surface and cut the dough in half. Flatten one half using your hands and the rolling pin.
  5. Heat the vegetable oil in a skillet over medium heat. Add the dough disc and poke a few holes in it using a toothpick.
  6. Cook until golden brown spots appear, then flip it over and cook more. Follow the same steps for the other dough half.
