How to Make Aromatic Pork Belly in the Oven

  1. Preheat the oven to 350 degrees F/175 degrees C.
  2. Put the olive oil in a small bowl.
  3. Chop the garlic and add it in the olive oil.
  4. Add the lime juice, the paprika powder, the dill, some salt, and pepper.
  5. Mix all the ingredients.
  6. Dry the pork belly and cut the skin horizontally and vertically, deep enough to go to the fat but not so deep as to cut the meat.
  7. Coat the pork belly with the olive and paprika mixture, but set aside about 1 tablespoon of it.
  8. Cut julienne the red onion and add it in the remaining olive oil mixture.
  9. Add the sweet potato slices and the jalapeno pepper cut in halves.
  10. Combine the vegetables with the sauce.
  11. Put the pork belly and the vegetables on a baking tray.
  12. Bake them for 45 minutes.
  13. Remove the tray from the oven and coat the pork belly with the tomato sauce.
  14. Bake it for 80 more minutes.
  15. Slice the pork belly and serve it with baked vegetables.

  1. Add water in a saucepan and bring it to a boil.
  2. Add the celery root, carrot, some fresh thyme, and a pinch of salt.
  3. Cook everything for about 15 minutes or until the veggies are soft.
  4. In the meantime, heat the vegetable oil in a skillet over high heat.
  5. Add the beef and season it with salt. Add some fresh thyme in the skillet. After flipping it over, add half of the the butter and let it melt.
  6. Cook the beef according to your preferences. If you like your beef to be rare, cook it for 2-3 minutes per side. If you prefer it medium, cook it for 4 minutes per side. And last, if you prefer it well done, keep it on heat for 5-6 minutes per side.
  7. Add the carrot and celery in a large bowl. Add milk, the remaining butter, salt, and pepper. Mash everything until smooth.
  8. Add the parmesan and combine everything.
  9. Serve the beef with the veggie mash and a light drizzle of worchestershire sauce on top!

How to Make Beef Tenderloin With Creamy Corn

  1. Take the meat out of the fridge and let it reach room temperature.
  2. Place it on your working surface and rub salt all over it.
  3. Heat the vegetable oil in a skillet over high heat. Slice the garlic head through the middle. Add the beef in the skillet and start cooking it. Add the rosemary sprigs, thyme, garlic (cut side down), and 1 tablespoon of butter.
  4. Cook the beef according to your preferences. If you like your beef to be rare, cook it for 6-8 minutes per side. If you prefer it medium, cook it for 8-10 minutes per side. And last, if you prefer it well done, cook it for 11-13 minutes per side. Set it aside.

  7. Place the corn in a tall glass container. Set up your immersion blender and blend everything until smooth.

  1. Preheat the oven to 400°F/200°C.
  2. Add the bell peppers in a large bowl.
  3. Season them with olive oil, salt, garlic, paprika, and thyme. Mix.
  4. Line a baking tray with parchment paper. Place the bell peppers over it. Slide the tray into the oven and roast them for 20 minutes.
  5. In the meantime, heat 1 tablespoon of vegetable oil in a skillet over medium heat. Add the pork neck and fry it until well browned.
