How to Make Pork Meatballs With Tomato Sauce

  1. Add the onion, carrot, celery stalk, and bell pepper to a blender. Mash them.
  2. Add the pork mince, egg, and pepper. Mix until even using a spatula.
  3. Add the panko and mix.
  4. Start shaping meatballs from this mixture. We’ve ended up with 20 of them but your number may vary.
  5. Line a baking dish with parchment paper and transfer the meatballs on it.
  6. Bake for 30 minutes at 360ºF/180ºC.
  7. Add the canned tomatoes and garlic to a pot over low heat. Season with salt and pepper and add the water.
  8. Cook and stir until it starts to simmer, then add the sugar.

For the rice:

2 tablespoons of vegetable oil
1 large onion, diced
1 sweet pepper, julienned

For the meatballs:

1 pound ground beef
2 eggs
2 garlic cloves, crushed
1 teaspoon lemon zest
1 teaspoon dried oregano
salt
pepper
vegetable oil
fresh parsley, chopped (for garnishing)

How to Make Beef Meatballs With Sweet Pepper Rice

  1. For the rice:

    Heat the vegetable oil in a pot over low heat, then add the onion. Cook and stir until tender.

  2. Add the sweet pepper and dried oregano. Season with salt and pepper then cook and stir for 2-3 minutes.
  3. Add the rice and stir for 1 minute or so. Add the beef stock and bring to a boil. Cover with the lid and boil for 8 minutes. Remove the lid, stir once or twice and remove from heat.
  4. For the meatballs:

    Add the ground beef, eggs, crushed garlic, lemon zest, and dried oregano to a bowl. Season with salt and pepper and mix until even using a spatula.

  5. Start forming meatballs with the beef mixture. We’ve got 16 of them.
  6. Fill a skillet halfway with oil and heat it over medium heat. Add the meatballs and fry them for 3 minutes, taking care to turn them on all sides in the process. Remove from heat.
  7. Layer the cooked rice inside an 11 x 7 x 2 inches (28 x 18 x 5 cm) baking dish. Add the fried meatballs on top. Bake for 15 minutes at 380⁰F/190⁰C.
  8. Garnish with fresh parsley.
